Brownies are amazing, but I've always thought blondies were just as tasty. I found this recipe on the back of a bag of Private Selection white chocolate chips. I bought too many bags of them for something else, and had one left over and was looking for inspiration. These were really good, and I discovered there were a few other people passionate about blondies in our small group.
11.5 oz bag of white chocolate chips
5 T butter, cut into pieces or Land O Lake light butter
2 large eggs
1 cup sugar or 1/2 cup Splenda sugar blend
1 tea. vanilla
1 cup all purpose flour or whole wheat pastry flour
1/2 tea. baking powder
1/4 tea. salt
1/2 cup macadamia nuts, toasted and coarsely chopped
1 cup craisins
Preheat oven to 350. Grease a 9 x 13 pan. Melt 1 cup of the chocolate chips and butter in a microwave for one minute, stir, and then microwave in 30 sec increments and stir until melted. Sometimes this only takes the one minute. Cool to room temperature. In a large bowl, beat eggs, sugar, and vanilla until thickened and pale and beat in white chocolate mixture. Sift flour, baking powder, and salt into chocolate mixture and stir just until batter is combined well. Stir in nuts, cranberries, and remaining chocolate chips and spread batter evenly in pan. Bake 30 to 35 minutes.
